Le petit maraîcher du bois de Cergy -
Purée d'aubergines et tomates
Préparation
1. Éplucher les aubergines, couper les en petits dés et arroser les de la moitié du jus de citron.
2. Laisser les reposer 20 min environ
3. Plonger les tomates dans de l’eau bouillante salée quelques secondes. Égoutter et éplucher ces tomates puis enlever les graines et couper les en petits dés.
4. Hacher finement les gousses d’ail.
5. Cuire les aubergines à la vapeur pendant 10 min.
6. Egoutter soigneusement les aubergines, mélanger les avec les tomates, le basilic, l’huile d’olive, l’ail et le jus de citron restant.
7. Mixer le tout finement pour obtenir une purée. Saler et poivrer à votre convenance.
8. Placer cette purée dans des ramequins individuels, puis placer les au réfrigérateur 20 min avant de servir.
NB : vous pouvez servir cette purée d’aubergines avec des toasts grillés, des crudités ou encore des grillades de viandes blanches ou de poissons en été.
Vous pouvez également: ne pas écraser en purée mais laisser ces légumes en petits dés.
